In this town (which has become a "service" town because of two large malls on either side - almost every other storefront on the main street is a restaurant.
None of them is what you'd call "fast food". Most are independent, as opposed to chains. Some offer "fine" dining while others present family fare.
Some offer alcoholic beverages and some without a liquor license have the set-ups for you if you byob. When one closes, another opens in its place because of the old cliche: "There's always room for another GOOD restaurant."
Can't speak for the dishwashers, but the wait staff in these establishments do rather well. Diners are generous when they get quality service and food that's edible and pleasant to the taste buds. (D'ya think that's why they feel justified to "bitch" a little when the service sucks and the food stinks?)
Whatever business you're in...or, for that matter whatever job you have...if you expect to earn a profit, the name of the game is: Bust you Butt.
In no other business does that other cliche apply so well: If you can't stand the heat, get out of the kitchen.

In fact, the last dodobird who tried it ended up being ordered to pay more than $77,000 in attorney fees ($65,000+ to my attorneys and $12,000+ to my co-defendant's legal advisor).

I don't take threats lightly, and I don't accept bribes (or did you call it a "mutually-beneficial arrangement"?). I'll turn you in faster than you can yell, "ARREST ME, I'M SCUM!!"
Do yourself a favor and turn your legal team loose in greener pastures.
