as anyone who's actually been in the business can tell you.

It's a HUGE frickin' ball of stress, with low profit margins, low wages and no thanks whatsoever. For some reason or another, the public doesn't think that really have to pay anything for their food. If you're in this biz, be aware that the general public demands the impossible: Stellar, gourmet
cuisine for peanuts. If it costs more than a grocery store is charging, it's got to be a rip off. Everybody wants luxury food. Nobody actually wants to pay anything for it.

Staffing is another impossibility. Trying to keep servers around is darned near impossible. The generaly public tends to treat servers like some sort of subhuman slave who is obligated to perform any deamining little whim they can think of, in exchange for a couple measly bucks. Prostitutes generally tend to get more respect, and most sane people quit rather than endure the stress and humiliation needed to make a full-time living in this position.

Kitchen workers are even more diffucult to keep. There's no money to pay anbody anything. The only people who show up have criminal records, drug/alcohol problems, mental problems, or otherwise can't go get a real job with real benefits and money that they can actually live on. Cooking, cleaning, washing dishes is NOT some easy-peezy foo-foo job. It's plain old, grueling work that doesn't pay poop-poo. The average cook works his frickin
butt off for, maybe 20ish a year. Dishwashers are required to handle material that would make a cat walk up a wall, backwards, hissing all for like $6-7/hr. In their spare time, they are required to every degrading, menial oddjob management can concoct.

Suffice it to say, people aren't exactly lining up at the door for these positions.

The hours and schedule are a nightmare. Everybody wants to eat on Saturday nights, and holidays. Food service workers must work in a mad frenzied pace, simply to accomodate everyone who show up at the door during these times. It's just plain hectic, stressful, and relentless.

Basically anybody in this biz is working their behind off for prison wages. Have a lil' empathy.
