Hi Steve!
I agree with Mr Bluto that you should stick to PDF format. I published a couple compiled (EXE) ebooks in the past and constantly had to deal with complaints from MAC users who couldn't open them.
I wish I could say I could help you with all this stuff, but I just don't have time lately. However, I did a quick google search for "ebook services" and found this site which looks quite promising - http://www.ebookgraphics.com/
I also did a search on "pdf security" and found several products that will do that for you too. There is basic security you can apply to a PDF yourself, but 3rd party products can do a better job and provide features you couldn't otherwise get natively.
The first website uses PDF format when they compile your ebook, so I'm sure you could talk to them about security as well.
