Why not start with something part-time that can earn you enough money to cut out the over-time hours? If you can replace those 12 to 15 hours of over-time each week with home-based income, you are at least part way to your goal.
Then as your sideline income increases, you could look to growing the income of both your online and hot sauce businesses to set aside a cushion of savings. Build up 2 to 3 months of money to cover extraordinary expenses, and you can then look at leaving the job you hate for your hot sauce and online incomes.
With the right internet opportunity, your wife could possibly help out when you aren't able to check email, return calls, etc. The right business could mean your wife could also be earning stay-at-home income for your family.
I have one associate who was a web designer, and quite good at it. Unfortunately, she views herself as not being able to sell. Except for online clients who came through her site, or by referrals, she was limited in finding prospective clients. She also discovered that the more sites she designed, the more hours she spent each week/month in doing maintenance and updates for clients.
After designing a website for me, and maintaining it for over a year, she decided to look into building her own online business in my industry. I encouraged her and she was successful in it. Her IT/webdesign/SEO knowledge paid off. In six months, her new venture caused her to shut down her web design business. Her online sales generated more income than her web design ever did, and she didn't have to leave home.
She also positioned herself as a consultant, so she was working with clients, helping them with solutions, and meeting their needs, without having to leave her comfort zone and becoming a sales person.
Her business may not work for you, but it is an example that there are online markets that your IT skills could help you turn into a source of home-based income.
