I had someone email me the idea of suggesting that they put up a blog about their college/town --- sort of an unofficial "student's perspective" - which is similar (or one way to do) what you mentioned. Personally, I think it's a GREAT idea... both of my kids are definite characters, they like to write, and would love to see the spin they put on some of what they see/do!
And I DO think that running a profitable website (which is the whole point, not just an "online diary" type of blog) WOULD look good on a resume.
