It probably wasn't all that hard for them, they used much of that every day so some of it, at least, would be second nature.
Consider this: way back in the distant past, a man who wished to navigate across an ocean would have to know spherical trigonometry if he hoped to accomplish his task. It wouldn't be enough merely to know a little about it, he'd have to know it. Today, I can accomplish the same thing by pushing a button on my GPS unit (assuming the debatable point of my knowing which button to push), and the machine will question up to 5 satellites and tell me where I am, and where that is in relation to where I'm trying to go. Sure, I can do it faster and probably more accurately, but I don't have anywhere near the knowledge the old time navigator had to have merely to survive.
I think you could give a lot more examples like this. Our forbears knew more than we do on a host of subjects, and learned it at an earlier age because they used it every day and were familiar with it. Those Kansas kids had probably helped load bushels of wheat into wagons and could spout the figures back to you without even thinking much about it, whereas you and I have to first figure out what a bushel of wheat is because we don't handle it.
Much of the rest was information any eighth grader could be expected to know if he had been paying attention in class. I seem to remember that my exams weren't all that easy, either and so help me I would have a job answering some of those questions without looking stuff up now.
