One thing to keep in mind is that new "niches" are being created all the time!
Some new niches are due to new technology... Or new trends in what's "popular" or desirable...
To give an example, not long ago, kite surfing (aka kite boarding) didn't exist. That's where a person uses something like a big kite to drag them along, while their feet are strapped to a big board (kind of like a surf board). This is all done on top of the water of course. It's great in places where there's lots of wind, but not many waves!
The point is... Only a few years ago, this niche didn't exist. Then, suddenly, it started catching on.
If you think about it, I'm sure you can find many "new niches" like this... Just keep an eye out on the various trends in society.
Researching new niches can actually be fun... :)
