I wouldn't change anything in the book.What is wrong with the person who buys the book simply pasting a picture of her child ontop of the one that is ther now? I wouldn't worry about this, it is great just like it is. I would 1-sell it like it is or 2- offer a special printing if the person choose it, but ad in the extra time it takes to make the special printing. Go for it, it is excellent.

p.s. you could sell it as an ebook, less expensive, to start and work on a deal for a hard book, just an idea.
